Healthy & Yummy Dinner Recipe: Chicken, Vegetable, & Rice Stir Fry

Ciao dears!,
        Earlier this week I posted a yummy but very calorie filled and not so healthy chicken dinner recipe.  Now I have a healthy one that I make more often.  Coming from a very Italian family, I often had a lot of Italian food growing up, which I loved, but sometimes I like to try new things.  So, sometime in the past few years my mom and I started making this more Asian inspired dish for dinner sometimes.  It’s pretty simple and can be easily changed for different variations by adding different vegetables and spices.  You can even change the chicken to shrimp or some other fish, whatever you prefer.  I’m not going to use exact measurements for this because I don’t when I make it…just use your judgment.  Comment below and let me know if there are any kinds of recipes you’d like me to post.  I have some more planned…I always have a million things planned…lol.
Chicken Breast
Olive Oil
Vegetables (whichever you prefer, fresh are better but frozen are good too): I used broccoli, red, green, and orange peppers, sugar snap peas, & carrots Salt
Worcestershire Sauce
Any other spices you prefer
Brown rice
I Can’t Believe it’s not butter (or whatever butter or butter substitute you like)
1.) If using broccoli, place in a pot of water and boil.  Drain when cooked after a few minutes (they will be soft).
2.) Place bag of brown rice in a pot of water and boil.  When rice is cooked (get softer) after about 10-15 minutes, drain.
3.) Put a few tablespoons of olive oil in a pan and bring to medium heat.  Add chicken to pan and cook for a few minutes on each side, until slightly golden brown and fully cooked.  Add some salt, pepper, and oregano to chicken as cooking, as well as any other spices you prefer. 
3.) While chicken is cooking, add a few tablespoons of olive oil to a large pan (or wok) and heat on medium.  Put all other vegetables in the pan and stir occasionally.  Add Worcestershire sauce (a generous amount, to taste), paprika, a little more pepper, salt if you like, oregano, and any other spices you like.  Continue cooking and stirring occasionally until vegetables are tender.  Add broccoli to vegetables.
4.) After draining the rice, put it back in the pot and mix in about a tablespoon or 2 of butter substitute (or whatever you like).  Then add rice to large pan with vegetables.  Last, cut up the chicken and add to the pan as well.  Mix everything together and season to taste as desired.
5.) Tada!  Now enjoy!

Peek-a Boo!

Ciao dears,
        This is a somewhat unusual outfit.  I like this dress (I have it in gray too.  They’re American Apparel dresses I found on for super cheap, like under $10! yay! with a gift card my sweetheart gave me for Christmas.  Thanks Dominick!).  What’s interesting about it is that you can tie the top part in like 15 different ways (see:, which is awesome!  I liked this way because it creates a little peek-a-boo hole in the front..hehe!  I wanted to wear colorful tights too, so I chose these magenta colored pair.   What do you think of this outfit?  Comment and let me know.

Baby Doll

Ciao people,
        I was in the mood for something a little different on this particular day (sometimes in mid-January) so I decided I’d wear my hair up high in a fun casual sort of bun.  I also wore my adorable little black peplum top with a pretty collar.  I most often tend to like tops that show off my top area…ha, but sometimes it’s nice to be a little more covered and still pretty.  You can still be sexy without having a lower cut top…right??  I wore a short skirt to balance it out anyway.  I do love the pretty beaded collar on this top.  I look a little like a doll in this outfit, with the pretty collar, little ruffles on the shrug, pleated skirt, and dainty oxford shoes…it’s very cutesy, ha!  You can actually see my earrings when my hair is up like this.  A lot of the time I’m wearing earrings but I forget to take a picture of them and my hair hides them.

Date Night Outfit: Pretty Pastel Green & Blue

Ciao lovelies!,

Happy Boyfriend Dinner Recipe: Breaded Chicken with a Spinach Cream Sauce over Linguine

Ciao dears,
        Doesn’t that sound yummy?!  It is!  My boyfriend loved it when I made it for him a little while ago.  It’s not too hard to make and is just a little bit fancy if you’re trying to impress a boyfriend or whomever.  Most importantly, it tastes delicious.  Hopefully you like spinach (it’s good for you and tasty!).  This recipe is not for when you’re trying to eat super healthy… You can cheat once in a while…lol.
2 eggs 1 cup white wine
2 cups milk
2 cups Italian seasoned bread crumbs

1 teaspoon garlic powder
1 1/2 teaspoon paprika
salt and pepper to taste
1/4 cup vegetable oil
4 thin-sliced skinless, boneless chicken breast halves
2 tablespoons all-purpose flour
1 pint heavy cream
2 teaspoons minced garlic
3 cups chopped fresh spinach
1 1/3 cup shredded mozzarella cheese
1 lb linguine (or other pasta you prefer)
1.) Beat the eggs and milk together in a small bowl and set aside.  Stir the bread crumbs, garlic powder, paprika, salt, and pepper together in another bowl.
2.) Heat the vegetable oil in a skillet over medium heat. Dip the chicken breasts into the egg mixture and then press into the bread crumbs, shaking off the excess crumbs. Cook the chicken breasts in the hot oil until golden brown on both sides, (no pink in the center) and the juices run clear, about 6 minutes per side. 
3.) While the chicken cooks, heat a pot of water for the linguine.  Add a pinch or two of salt.  Add the pasta when the water boils and cook until al dente (or more if you prefer…). Drain.  
4.) Remove the chicken breasts from the pan, set aside, and keep warm (in a toaster oven on low heat possibly).  Pour the white wine into the pan and bring to a boil while scraping the browned bits of food off of the bottom of the pan with  a wooden spoon.  Increase the temperature to medium-high and stir in the flour. Cook and stir until the wine has reduced to half its original volume, about 1 minute. Whisk in the heavy cream, milk, and garlic and bring to a simmer. Season to taste with salt and pepper, cooking and stirring until thickened, about 8 minutes.  Stir in the spinach and mozzarella cheese.  Cook and stir until the cheese has melted and the spinach has wilted.  Add the pasta to the pan and mix with the sauce. 
5.) Serve!  Place some pasta on the plates.  Put chicken breast (s) on top.  Pour a little of the sauce over the chicken breasts and tada!!  Now enjoy!  (Also, enjoy how much your boyfriend or whomever you cooked for will love you hehe!)

Peachy Keen!

Ciao darlings,
        I never was really into the whole ripped jeans thing…but I think I like it on these pants.  I love the peach color so much!  I dressed them up a little with cute cream booties and a sparkly sweater but they would look nice with flats and a t-shirt as well.  I’ll be wearing them again in the spring maybe with other pastel colors.  Smile

Who taught that voodoo that you do?

Ciao people!,
        So, this outfit is a result of me not wanting to get overly dressed up to go to work so I could be comfy, while still wanting tome sparkle and interesting aspects to my outfit.  I went with an all neutral brown color palette.  This shirt is a kinda baggy sweatshirt but with sparkles on the sleeves!  I wore my cheetah print jeggings to match and add a fun print.  That’s all for now!  I’m saving overly wordy posts for later, when I’m inspired or want to share a short story.  I must get on that eventually…not enough time in the day.
