5 Fun Pastel Infused Outfits!

Ciao everyone!,
        Two posts in one day..,yay!  I have always loved pretty pastel colors, especially pink and mint green, as of late.  Usually these colors are prevalent in the spring, but this winter pastels (soft pinks particularly) seem like they’re going to be big as well (according to my September fashion magazine research…ha! Winking smile).  Here are some of my pretty pastel infused outfits from April & May.  I’ll definitely be wearing some of the pieces in the upcoming fall and winter though. Comment below and tell me, will you wear pastels in the fall and winter?  Or do you consider them a spring and summer thing? 
1.) Floral Pastel Lover
This outfit is the perfect pastel filled outfit.   I love this jean jacket from Target; it’s got flowers and a rainbow of pretty girly colors. Smile

2.) Interview Pretty & Chic
I was going for a classic business attire type outfit: white blouse, black pencil skirt, & black heels, but with a little personal touch: my favorite pastel pink blazer and a pretty cameo brooch.  I give myself an A for this outfit..ha!  Unfortunately, I was going to an interview for a school district that is a disaster and couldn’t afford to hire any new teachers this year (or re-hire the 100’s of teachers they aid off…uggh).

4.) Cupcakes & Flowers, Oh My!
I look like I was in a really good mood on this day.  It must have been because my sweet boyfriend (Hi Dominick! <3) sent me a bouquet of flowers shaped to look like a giant cupcake!  So cute!!!  I also liked my floral, girl outfit, which always makes me happy. Smile

5.) Who Destroyed My Peaches?! Winking smile
I didn’t always like the ripped jeans look, but I thought I’d try it when I found these peach jeans.  I like them, it’s a fun interesting look.

Easy & Tasty Dinner Recipe: Grilled Chicken Topped with Roasted Peppers, Spinach, & Mozzarella

Ciao dears,
        As much as I love all things complicated (like macaroons, fancy cakes with pretty roses, elaborate pasta dishes with fancy sauces, etc.), sometimes it’s nice to cook something simple and delicious, yet not too simple or boring (no creepy canned/processed food…ha).  I made this chicken dish one night for my family and boyfriend and they approved. Smile  Exact measurements are not necessary for this, just make as much as you need or want, depending on how many people you are feeding.  Enjoy!
Grilled Chicken Topped with Roasted Peppers, Spinach, & Mozzarella
Bell Peppers (red, yellow, and/or orange)
Extra Virgin Olive Oil
Garlic (optional)
Chicken Breast
Mozzarella Cheese
Lemon (optional)
Oregano and other spices (optional/your choice)
1.) Roast your peppers.  I chose red and yellow because it’s what I had, but yellow, or any combination of the three would work fine as well (red is sweeter/more flavorful, I think).  Don’t buy premade roasted peppers…please.  They taste so much better when you do it yourself.  The ones that sit in the jar aren’t the same.  It’s not that hard.  Simply preheat your oven to about 400 degrees.  Then, wash your peppers and place them on a sheet pan (cookie sheet/baking pan).  You can line the pan with aluminum foil if u wish so it doesn’t burn and is easier to clean, but I didn’t and it still works just fine.  Drizzle (or brush) the peppers with Extra Virgin Olive Oil (every Italian’s favorite ingredient Winking smile ).  Also sprinkle a bit of salt and pepper.  You can also add a bit of chopped garlic if you wish.  Cook the peppers for about 20 minutes, turn them over, then cook for about another 20 minutes.  Your peppers are done when the skin is slightly blackened and very soft.

2.) Seed and peel your peppers.  After the peppers have cooked, wait a few (20-30…go to step 3!) minutes so you don’t burn yourself.  Cut the peppers in half vertically (top to bottom) and pull out the stem and seeds.  Peel off the skin as well.  Cut the peppers into thick strips.  (If you make more peppers than you need for the chicken, or if you just wanted to make roasted peppers because they’re delicious on their own, store them in a glass jar/plastic container covered in olive oil and place them in the refrigerator.)  (I forgot to take a picture after I roasted and peel them…I have one somewhere but can’t find it right now…sorry!)
3.) Grill the chicken.  While your peppers are cooling, put a bit of olive oil into a grilling pan.  When hot, place the chicken in the pan and cook until done (10-15 minutes), turning over every few minutes.  Add a bit of salt and pepper, as well as any other seasonings you prefer (a bit of oregano, etc.). 
4.) Sautee your spinach.  (This step could be eliminated if you don’t like spinach…but it’s yummy and good for you…so you should! ha…)  Wash your spinach. (Very important!)  Heat some olive oil (ALWAYS extra virgin! for best taste and amazingness!) in a frying pan.  Add spinach.  Stir and cook for about 5 or so minutes, until spinach is wilted.  Add a sprinkle of salt, pepper, and a bit of lemon juice.   
5.) Put everything together, bake quickly, and enjoy!  Place your grilled chicken on a sheet pan.  Top it with some spinach, then roasted peppers, then a handful of mozzarella cheese.  Place the pan in the oven at about 350 degrees for about 3 to 5 minutes, or just long enough for the cheese to melt.   Serve on a plate and enjoy!   You can of course serve it with a side of pasta, side salad, or whatever you choose, or just enjoy it alone.

Back in the Spring…

Ciao dears!,
        So, I’m trying to do a lot of catching up on my blogging, like I’ve been meaning to do.  So, the rest of this month (only a couple days left already of August!) and next month too probably will be filled with tons and tons of posts from me.  Keep checking back! Winking smile  I have outfits I need to post since April…so it’s going to take a while…along with other things I’ve been mentioning I wanted to post.  Enjoy these outfits from last spring.  Next, all of my summer outfits will be up on here soon.
1.) Pretty Pink & Cowgirl-esque
        I love my pink jeans, but these make me look too wide.  Anyway, it was still a bit chilly then (in April! I’m super behind with this…) as you can tell from my boyfriend’s  He tends to pop up in a lot of my outfit pictures. <3

The title is referring to the colors of my boots and jacket…ha.  This jacket will be cute to wear in the fall again soon.

3.) Easter Tulle Confections
I absolutely adore this skirt!!! It’s made of tulle, it’s frilly, poofy, girly and tutu-esque! In other words, it’s a princess skirt and I love it!  I actually bought it in mint green and peach too.  Those outfits will be here eventually.  Because it’s full and poofy, it makes you look a bit wider at the bottom (which is the last thing I need..) but it’s still so pretty and fun to twirl in. Smile  I guess I just have an obsession with poofy, full, twirly skirts.  I adore the website that I bought the skirts from too by the way.  It’s called Shabby Apple and they have the most adorable and beautiful selection of vintage inspired clothes.  There are so many more dresses and skirts and everything that I want from that site.  (Not a sponsored post…I just love it a lot!)

Looking back at these pictures, I’m wondering why I haven’t worn this dress again since… I love lace and have a bunch of lace items in my closet.  It must have just gotten forgotten about on my overcrowded dress rack.
